What Are We Eating Wednesday: Stuffed Pasta Shells

No explanation needed here... just YUM!

1 pkg. jumbo pasta shells (boil according to package), drain
1 med. pkg. ricotta cheese
1/2-1 cup parmesan cheese
1 cup grated mozzarella cheese
1/2 lb. cooked-chunked chicken (optional)

Mix all ingredients (except pasta) in a bowl.

Add chicken (if using) and warm in a skillet over med. heat for 3-4 min. until heated throughout.

Using a spoon, fill each shell with a scoop of cheese/chicken mixture. Place in a baking dish. Top with your favorite pasta sauce (here, I used Bell Pepper Pesto). Bake @ 350* for 10-15 min.
