This is a super easy, super fast, super tasty recipe... that gets used a lot in our house. It is great because it takes no time to put it together and it can be changed up a little (like any chicken and rice).
Ingredients: Lg. can cream of chicken 16oz. sour cream 1 onion packet (the dried onion soup mix) boneless/skinless chicken meat (I really like dark meat for this) your favorite rice (I use the Batsami Rice Medley from Trader Joes... YUM) *optional.... veggies... this time I used a bag of frozen broccoli
Mix the sour cream, onion packet, and cream of chicken soup in the croc pot. Add the chicken (you can leave the chicken in fairly large pieces because it will be super tender after cooking... and you can just fork split it later). Cook on high 4-6 hours or on low 8-10 hours... both ways work well!
1 hour before serving, add the rice and veggies (if you are using them).

This is a new recipe in our house... and it is sure to make some repeat appearances! It is super easy and quite delish!
Ingredients: 2 cans cream of chicken soup (I used 1 can Creamy Chicken Verde in place of one of the cans) 16 oz. sour cream 1/2 onion diced (I used 2 tsp. onion powder instead) 1 can diced chilis (not pictured) 3-4 chicken breasts cut into bite-sized chunks 10 tortillas (torn into eighths) salsa shredded cheese (cheddar or pepper jack work well)
Combine soups, sour cream, onion, chilis, and some of the cheese in a dish. Mix together.
In your croc pot, layer tortillas, soup mix, chicken, and salsa. Repeat 2-3 more times. Cover and cook on low 6-8 hours. Just before serving, top with the remaining cheese.
Serve warm... we like to eat ours with some kind of corn or tortilla chip! Enjoy

So... another fantastic croc pot meal is shredded beef! This is so super easy and the meat is amazingly tasty.
Place a roast (not super fatty... but not completely trimmed) in your croc pot. If you want, you can season the meat according to the use. For example, if you are making tacos, use a little taco seasoning. If you plan on making sandwiches, use some salt, pepper and onion powder. As for cooking times, go with a general rule of thumb, low = 6-8 hours or high = 4 hours. For this roast, I did high 3 hours and then low another 2 hours until we were ready to eat.
I used a round roast that I got on sale for $1.97 lb for shredded beef tacos. I seasoned this with a little bit of kosher salt and dropped it in my croc pot!
5 hours later, the fat had all but melted away leaving some really tender meat. Use a fork to shred the meat.
We feasted on tacos... and then leftovers were used to make sandwiches! Yum!
Mmmmm! These pork ribs are SO easy and SO super tasty! I have been stocking up on ribs lately since they have been on sale almost every week. So I needed some way to cook them without grilling them (since the weather has been a bit soggy this winter). And I have been getting a few requests for croc pot recipes... so here is this one (well, it isn't really a recipe even... it's that easy)!
Ingredients: -rack of ribs -bbq saucePlace the rack of ribs in the croc pot and cook on high 4 hours. You don't need to add water or anything. Just keep the lid on the pot... no peeking! After 4 hours, this is what the ribs should look like. And there should be some juice in the bottom of the pot. Spread bbq sauce all over the ribs. Put the lid back on the croc pot and turn the heat to low. Cook for anotuer 25-30 min. The meat is SO tender and it just falls off the bone! I like a modest amount of sauce... so right out of the croc pot is perfect for me. For those of you who enjoy a little more sauce, you can add more after cooking!
