This is a super easy and quite tasty meal. This recipe can be used on other fish (like salmon)* you just need to adjust the cooking time to accommodate the thickness of the fish.
Ingredients:
Tilapia (or fish of choice)
1 cup mayo
1/4 stick butter (melted)
1/2 t. basil
1/2 t. onion powder (or you can use 1/4 cup diced onion)
pepper to taste
juice of 1 lemon
Parmesan cheese to sprinkle
Combine all ingredients (except fish and Parmesan cheese).
On a foil covered baking sheet, place the tilapia and coat heavily with the mayo mixture.
Broil for 7 min. then remove from oven and flip over (try to coat with the run-off mixture).
Broil for an additional 3-4 min. Keep a close eye on the fish as it cooks VERY quickly!
Enjoy!
*Tilapia is a very thin and quick cooking fish. I would expect salmon to take closer to 9 min for the first side and then another 4-5 for the second side. This is speculation, as I haven't used this method on salmon... so keep a close eye on it!

Yay! Did you know that just a few days ago we were asking your parents for ideas about a good way to cook Tilapia?! They recommended something like this, and I'm glad to have it all written down now. Can't wait to try it!
