I really enjoy a tasty pasta sauce... and lately we have been having marinara once a week... I decided to try and switch it up a little and make a delish pesto... using bell peppers! YUM!
Ingredients:
3-4 fresh bell peppers (oven roasted for 20 min @ 400*)
1/2-1 cup toasted pine nuts
2T olive oil
1/2 T red wine vinegar
2-3 cloves minced garlic
1/2 t ground dried basil
1/2 t kosher salt
a few shakes of cayenne pepper (if you like a kick)
Over medium heat, lightly toast your pine nuts.
In your food processor, add oil, vinegar, basil, salt and pepper...
top with pine nuts and bell peppers...
Process until a slightly lumpy paste (or longer if you prefer a smoother pesto)...
Serve over pasta... and enjoy!
