What Are We Eating Wednesday? Stuffed Bell Peppers

I didn't always like bell peppers... but over the past couple years I have come to LOVE them... and this recipe is a super tasty way to prepare them!


Ingredients:
4-6 bell peppers (any color)
rice (any variety... prepare as directed)
ground beef (or turkey)
1-2 cloves of garlic, minced
1/2 onion, chopped (I used 1 tbsp onion powder instead)
1 med. can tomato sauce
salt to taste
mozzarella cheese
parmesan cheese

-Preheat oven to 375*.
-Remove the top from your peppers and scrape the seeds from the inside as well. A good tool to use for this is a grapefruit spoon.

-Place the peppers in your baking dish in 1/2 in. of water. Place them in the oven for 15 min. This helps get them tender without wilting.

-Cook rice according to package.

-Brown your meat, onion and garlic.

-Once the meat is done, add the rice, tomato sauce and a bit of salt to the meat mixture. Stir together.

-Remove peppers from the oven and reduce heat to 350*. Stuff the peppers with the meat/rice mixture. Bake for 15-20 minutes.

Remove the peppers from the oven, top with a bit of mozzarella and parmesan cheese, and bake for another 5 minutes.

When done, the peppers should hold their shape but be tender and the cheese should be melted.

Serve hot... and enjoy!
