What Are We Eating Wednesday? Taco Soup

This is by far the most used recipe I have... and I owe a great deal of thanks to my bestest. She introduced the hubby and I to this recipe a few years ago and we instantly knew it would make very regular appearances in our home. She got the recipe from Rachel Ray and we are so glad she did!

This recipe can be done in a croc-pot or on the stove. It stores well (including freezing) and it is super easy and super fast. It also works with a variety of ingredients... so if you didn't make it to the store, you can use what you have on hand and more likely than not... it will work out well!

Ingredients:
2 cans pinto beans
1 can kidney beans
*you can use any combo of beans you like... you can also use black or white beans instead
1 can whole kernel corn
*you can also use 1/2 bag frozen corn
1 can diced tomatoes
*I like the diced tomatoes with green chilies or Rotel tomatoes
1 lb cooked meat
*I have used ground turkey, ground beef and cooked chicken and all work well
1 packet ranch dressing seasoning
1 packet taco seasoning

Combine all ingredients (liquids from cans as well) in croc-pot or lg. pot.
For a croc-pot, cook on low 8-10 hours or high 4-6 hours.
For stovetop, cook over med-high heat until warmed throughout.

Top with your favorite taco toppings and chips... we like cheese, sour cream, lettuce, chips, olives, avocado... YUM!

We always love this one! And I agree, you can do lots of substitutions and it still works out well!
Recently, we realized we didn't have a ranch seasoning packet, so we put in 1-2 Tbsp of actual ranch dressing, and it worked great! In fact, we think we're going to stop buying those relatively expensive seasoning packets and just go with dressing in the future.
