What Are We Eating Wednesday? Croc Pot Zesty Fiesta Chicken

This is a new recipe in our house... and it is sure to make some repeat appearances! It is super easy and quite delish!

Ingredients:
2 cans cream of chicken soup (I used 1 can Creamy Chicken Verde in place of one of the cans)
16 oz. sour cream
1/2 onion diced (I used 2 tsp. onion powder instead)
1 can diced chilis (not pictured)
3-4 chicken breasts cut into bite-sized chunks
10 tortillas (torn into eighths)
salsa
shredded cheese (cheddar or pepper jack work well)

Combine soups, sour cream, onion, chilis, and some of the cheese in a dish. Mix together.



In your croc pot, layer tortillas, soup mix, chicken, and salsa. Repeat 2-3 more times. Cover and cook on low 6-8 hours. Just before serving, top with the remaining cheese.


Serve warm... we like to eat ours with some kind of corn or tortilla chip!

This is very similar to a casserole we make called Viva La Chicken! However, it takes some time putting it all together since you have to boil the chicken first, layer everything the night before and cook the following day. I am so excited to try this in the crock pot! Thanks!
