What Are We Eating Wednesday? Meatball Subs

My Hubby LOVES a meatball sub... and so I recently decided to try making some at home! They are super easy... and the meatball recipe makes enough for eating half and freezing half (I am cooking for 2... but you can easily double the recipe)! This is really my kind of meal!

I will give you the meatball recipe and then how to put the sandwich together!

MEATBALLS!
To start you will need:
1lb ground meat (I use turkey)
1 egg
1/4 cup milk
1/4 cup bread crumbs
1 Tbsp olive oil
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp pepper
a shake of cayenne pepper

*Optional: 1 minced onion, 1/2tsp onion pepper, Parmesan cheese

Combine all ingredients in a large bowl and mix on low until well combined.


This is what the mixture will look like once it is all mixed together.



Grease an oven safe pan.
To create the meatballs, I like to use a scooper (also can be used for scooping cookie dough). This makes even meatballs and means I don't have to get meat all over my hands :)
My scooper is 1 1/2 inches.


I am able to get 25-30 meatballs from 1 lb of meat.



Place your pan in a 400* oven for 25 min.


Meanwhile, get your subs ready...
Sub sandwich rolls
Spaghetti sauce
Mozzarella cheese

After 25 minutes, pull the meatballs out of the oven.

This is where I take 1/2 of them out of the pan for freezing.

Cover the remaining meatballs with 1/2 jar spaghetti sauce and return to oven for 6 minutes.

Place the freezer meatballs on a cookie sheet lined with foil to cool before freezing.



Put some mozzarella cheese on your bread.







Here are the meatballs all ready to eat! Oh Yum!




I like 4 meatballs on a sandwich... oh this is so good!



And if you are cooking for 2 (or doubled the recipe) you have another batch in the freezer!
